Bean and Rice with Lemon Garlic Buttered Salmon Belly
Sick of ordinary rice? Try this ultimate rice and bean recipe; the basic ingredients create an explosion of flavor. You may pair it with anything you choose, but the buttered salmon belly will make the perfectO match. Best served at dinner. This main course will make you hungry.
Bean and Rice Ingredients:
1/2 cup of red bean
3 cups of white rice
3 1/2 cups of water
1 cup of mixed veggies (corn, green beans, carrots)
1/2 cup of raisins
cherry tomatoes
1 pc. Green bell pepper or green jalapeño(chopped)
1 pc. of onion (chopped)
2 tablespoons Canola Oil
1 tablespoon sriracha
Salt and black ground pepper to taste
Instruction:
Prepare a red bean in a bowl with water, and let it soak all night. - This will help to make the beans cook more quickly and evenly.
In a pan, sauté chopped onion, cherry tomatoes, and green bell pepper in canola oil for 3 minutes, stirring occasionally.
Add the mixed veggies and raisins, stirring occasionally.
Add 3 1/2 cups of water, followed by the red bean. Add 1 tablespoon Sriracha, salt, and pepper to taste.
Wash rice until water runs clear. Drain the water and add it to the pan.
Cover; heat for 15 to 20 minutes until the liquid is absorbed and the rice is cooked.
Garlic Butter Salmon Belly Ingredients:
2 tablespoons oil
2 tablespoons butter
4 cloves of Garlic (minced)
1/2 kilo of Salmon Belly or Salmon Fillet of your choice
1 Lemon
Salt and black ground pepper to taste
Instruction:
Using a knife, finely chop the garlic; this will ensure that the garlic juice retains its excellent flavor rather than using a press or crusher.
Wash the salmon belly, pat the salmon belly dry with paper towels. Add salt and pepper to taste, and set aside.
In a pan, add 2 tablespoons of oil and 2 tablespoons of room-temperature butter. As soon as the butter melts, add and sauté the minced garlic. Stir from time to time until the garlic begins to smell. Do not wait for the garlic to turn golden brown; as long as you smell the garlic, you can now add the salmon and cook for 10–15 minutes.
Once the salmon is lightly cooked just enough, you can now squeeze 1 whole fresh lemon, cook for 2-3 minutes, and baste for 1 minute. This will infuse the dish with flavor and fragrance.
For plating:
Add 1 cup of beans and 1 cup of rice to the plate. Place the salmon belly with garlic butter on top and decorate with a half-slice of lemon. then prepared for serving! Have fun!
