Crispy Pork Belly with Sweet & Sour Chili Sauce
Do you fancy some juicy, crispy pork belly? I got you! This recipe brings you a tasty and juicy pork belly without using a lot of oil. We'll use an air fryer to make it healthier.
This is a very exciting dish that you can serve on any special occasion, family gathering, or this coming holiday. Serve with sweet and sour chili sauce to bring extra rich and satisfying flavors. Yes, I know that this would require more work on your part, but I promise, after you make it, a combination of crispy and tender textures will be an accomplishment.
Crispy Pork Belly Ingredients
1 kilo of pork belly
Rock salt
4 pcs bay leaf
1 tsp. Whole black pepper
3 cloves of garlic
3 cups of cold water
1 tbsp soy sauce
1 tbsp fish sauce
Additional Seasoning
1 tbsp black ground pepper
1 tbsp white ground pepper
1 tbsp salt
1 tbsp paprika
1 tbsp Cumin powder
Instruction:
- Prepare belly pork; you can cut it into two to fit in your airfryer. You can remove unwanted fats on the meat side and make a 1 inch deep slit for seasoning. And for the skin side, remove excess hair using a knife to make a perfectO crispy pork skin.
- In a bowl, put the belly pork and add 3-4 cups of cold water.
- Add salt, 3 smashed cloves of garlic, and 1 teaspoon. Whole black pepper. Cover and soak for 30 minutes to 1 hour.
- After soaking, transfer to a stock pot and bring to a boiling for 5 mins. Note: To prevent overboiling, begin by counting on a first boiling. Then, transfer to a plate for seasoning.
- I use five spices: 1 tbsp black ground pepper, 1 tbsp white ground pepper, 1 tbsp salt, 1 tbsp paprika, and 1 tbsp cumin powder to season the meat side and cover with aluminum foil to achieve the juiciness and prevent burning of the meat. Note: Do not cover the skin part of the pork; dry it with a paper towel and add enough layer of rock salt to fully cover the skin, and let this sit in the fridge for 1 day. This is the trick to getting the crispy pork skin, so don't skimp on it.
- Place in the air fryer at 180°C for 30 minutes.
- Take off the whole layer of salt and brush a thin coating of oil.
- Place into an air fryer at 200°C for another 30 minutes or until the skin is golden crispy.
